I never was a fan of leftovers, but now since my grocery store visits are limited, I’m using every piece of Tupperware and what’s in it creatively as I can. If you’re persnickety by nature you might have to get more creative with your ingredients. Here’s one you might my leftover Chinese food fascinating for breakfast.

Stir-fry Breakfast Ingredients:
- 3 eggs scrambled
- 3 tablespoons water or half & half
- 2 teaspoons olive oil
- 1 teaspoon butter
- 3 tablespoons Stir fry or veggies & meat or seafood
- 4 tablespoons any kind of cheese
- Add olive oil and butter to the small skillet at medium heat
- Heat stir fry to skillet – heat for 3 minutes or until leftovers are hot
- Pour scrambled eggs over stir fry
- Move eggs around in the pan
- Sprinkle cheese over eggs and leftovers
