Dishin' With Debbie

I couldn’t let National Queso Day pass without a nod to my favorite appetizer.  This one adds a bit of chorizo for some extra spice.  It’s served hot and bubbly straight from the oven to the table in a skillet.  And, it’s loved by kids and adults of all ages.  Feel free to top it with your favorite guacamole or a dollop of cilantro chimichurri as I did.


1 cup shredded mozzarella cheese
1 cup shredded queso cheese
1 garlic clove, grated
8 oz. chroizo
chips for dipping


Heat oven to broil.  Add chorizo and garlic to skillet and cook until done over medium heat.  Drain and set aside.  In a small skillet or ovenproof dish, add cheese and broil until melted and slightly browned.  Top with chorizo and serve hot with chips.  Add optional dollop of guacamole or chimichurri, or just leave as is!
