Dishin’ With Debbie-Walking Tacos
I would argue with anyone that the best time of year for weather, food and fun stuff to do is Fall! Being a native Texan we’re raised with a love of football from an early age. I remember high school football games under the Friday night lights. Every now and then there was just a hint of a chill in the air. Our stadium concession stand served Frito Pie, a Texas staple, since Fritos were produced right in the state. To keep it simple, they just ripped open a bag of Fritos and layered in some warm Texas chili, cheese and chopped onions…if you were daring. We grabbed a plastic fork or spoon and returned to our seat to yell for the team. This “Walking Tacos” twist on the old concession stand favorite replaces the chili with taco meat. The toppings are up to you.
Make this for a tailgate crowd and keep the filling warm in a crockpot. Set out the toppings and let everyone help themselves. Or, serve cold as a taco salad. You can also mix and match the chip options. The taco seasoning packet from the store is perfectly fine, but I make my own using this simple mix of spices.
1 T chili powder
1 tsp. ground cumin
1 tsp. garlic powder
1 tsp. paprika
1/2 tsp. dried oregano
1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. crushed red pepper flakes
Brown beef. Add seasoning and enough water to make a little saucy then cook down 3-5 minutes.
