Ms. Jessica’s Ice Cream Pop Ups: Stratford Richardson YMCA
Ms. Jessica’s Ice Cream Pops are back! Every summer, I team up with my friends at Bluebell Ice Cream to provide a cool treat to kids at area summer camps. Yesterday, I popped up on the campers at the Stratford Richardson YMCA. We had a great time, listening to music, taking pictures, and enjoying our Bluebell Bullets. Chocolate Peanut Butter Overload Pretzel Bars
Ingredients
- 3 cupscrushed pretzels
- 3 cupspeanuts
- 1/2 cupmelted butter
- 4 tbsp.peanut butter
- 1 half gallonBlue Bell Chocolate Peanut Butter Overload Ice Cream
- Chocolate syrup
Directions
- Line a 9×13 baking pan with parchment paper.
- In a large bowl, mix together pretzels, peanuts, melted butter and peanut butter.
- Spread 2/3 of the pretzel/peanut mixture evenly into the lined baking pan.
- Freeze for 1-2 hours.
- Add a layer of Blue Bell Chocolate Peanut Butter Overload Ice Cream.
- Freeze for 1-2 hours.
- Top the ice cream layer with remaining pretzel /peanut mixture.
- Drizzle chocolate syrup on top.
- Cut into small squares and enjoy!
Blue Bell French Toast
Ingredients
- 1 cup melted Blue Bell Homemade Vanilla Ice Cream
- 3 eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 8 thick slices of bread (day-old brioche, challah or hearty country white is recommended)
- Cooking spray
- Suggested toppings: Blue Bell Ice Cream, fresh berries, chocolate chips, chopped nuts, maple syrup, honey, whipped cream
Directions
- Pre-heat non-stick griddle on medium-low heat to 375°.
- In a shallow bowl, whisk together the melted ice cream, eggs, vanilla, and cinnamon.
- Dip both sides of each slice of bread into the mixture, making sure the bread soaks up plenty of batter.
- When you’re ready to cook, lightly coat the griddle with cooking spray.
- Cook battered bread on each side for 2–3 minutes, or until golden brown.
- Place two slices on each plate and add your favorite toppings, beginning with a scoop of Blue Bell Homemade Vanilla Ice Cream. Bon appétit!
