Dishin’ With Debbie this time takes a trip to the southwest. To my delight, every week I discover a new delicious way to incorporate Mrs. T’s Pierogies into my dishes. The Southwest Pierogy Breakfast Burritos remind me a bit of the popular breakfast item at everyone’s favorite drive-thru. I mean that in the best way possible. I say that because it has fluffy eggs, crispy bacon, cheese and Mrs. T’s Onion Pierogies wrapped in a tortilla and browned up until crispy. The pierogies, of course, are soft pillowy pasta pockets filled with fluffy potatoes, and, in this case onions. The pierogies get sauteed in the same pan as the bacon. So, they not only crisp up, but the flavor is amazing. And, we tossed in some some chopped fresh spinach, too. Serve them with salsa and sour cream.
